Bruschetta

 


My wife, the Queen, sure does eat well.

This is olive oil toasted baguette topped with my bruschetta mix.  The Bruschetta mix (Tomato, garlic, herbs, things, and stuff) was drained.  Then it had olive oil, a touch of salt and fresh black pepper, and a pinch of cayenne mixed in.  The sliced baby cucumber are from this mornings pickling adventure, and has been brined for two hours.  Fresh picked basil over all, and a final tiny drizzle of EV olive oil.

Two notes.  A)  One pint of my bruschetta topping is just enough for lunch for two.  B)  Herself STRONGLY suggests I make more of this.  A lot more.
