Blackberry wine, day 2, the yeastening...

The next batch of this season's wine: Blackberry.

With this run, I'm shooting for a semi-sweet with a clean flavor and a light touch.

I think I may have had an epiphany regarding how yeast works in wine-making, and how to control flavors.  We shall see, but I have high hopes.
