Food Porn, Christmas Eve comfort food edition

Country skillet....

Half an onion, diced, and two potatoes sliced in chunks. Melt half a stick of butter in a cast iron fry pan, on medium, and toss in the onions and potatoes when the butter is fully melted. Stir and flip occasionally, till the whole mess is browning on edges.

Turn the heat down to low, and grind on a whole lot of fresh black pepper. Zap it with a few pinches of sea salt while you are at it, and the same in garlic powder.

In a bowl, blend four eggs till pale and well mixed. I prefer free range eggs, with their beautifully rich and flavorful yolks. Give the eggs a few splashes of hot sauce and blend till mixed. Pour the eggs gently over the contents of the fry pan, and lid it if you have one.

Give it about ten minutes on low, and then use a spatula to raise the edge of the egg/potato perfection and tilt the pan to allow any unset eggs to run under the edge, AKA as in omelet making. When its mostly set, carefully flip the massive mound of golden goodness in the pan. Don't sweat it if it breaks up a little, as the layer of Colby Jack cheese you now put on will bring it back together.

Lid it again until the cheese melts and runs all askitter, and then slide it all onto a plate.

Get a fork, and a quiet place to relax..... and enjoy an honest plate of comforting home made goodness.

Add bacon if you are lucky enough to have any.......
