Flour, water, yeast, and salt.....

We are out of bread here at the castle.

I could go out and buy a loaf of bread, which would be handy because we are out of milk too. 

But..... I already went out and peopled today.  Long enough to acquire a bottle of Templeton's Rye, which is worthy of the peopling cost.  Bread, not so much.

I decided to go lazy. I warmed the Dutch oven in the oven, til both were warm but not hot.  In the KitchenAid went 1.5 cups of warm water, a few teaspoons of sugar, a couple tablespoons of dry yeast, and about 1/2 cup of flour.  Stir to mix, then shut it off and set the timer for 10 minutes.

10 minutes later, we have sponge.  I added a splash of olive oil, a teaspoon of Kosher salt, and a mound of AP flour (Shooting for the dry side of the mark).  On goes the mixer, and as it complains I add a tablespoon of warm water at a time til it looks like bread dough.

5 minutes on the timer, as the machine beats it up and makes a dough ball.   At 5, I shut it down, and peel the dough off the hook and make a roundish ball.

SPLAT.... into that warm and now oiled Dutch oven, lid on, and back in the warmish oven with the door cracked.  Timer set for 60 minutes.

In 60 minutes, I'll dial the oven to 400 and reset the timer for 40 minutes.

Let you know this turns out...... cause I'm just guessing here.
