You choose the culture, and it's almost certain to have it's own way of doing something like this. It makes sense. It's delicious, hearty, healthy, and relatively cheap to make.
She spent time womping up a spicy gravy with nice chunks of tomato, onion, and I think some peppers may have wandered in as well. All to the tune of whatever she used to bring some heat.
Utterly delicious!
Now, all week long *I* am the bringer of breakfast, as she is at her desk working pretty early. Coffee and food.... yes Madam.
This morning I went off on the Eggs Pomodoro road myself.
For hers, I sautéed a bit of onion before spooning on leftover tomato gravy from an earlier chicken dinner. Once, heated through, all that went into an oven-safe dish and a fresh egg was broken into it. Grinds of pepper, and into a 350 oven. Total cook time turned out to be 20 minutes, and no report yet on yoke condition.
When I judged it done, it was graced with some fresh sliced and seasoned tomatoes, whole wheat toast, and a quick dash to present it to Madam for approval.
Cooking part is eeeaaasy.... but judging doneness in the oven is nerve wracking. I'll have to work up a recipe on that timing.
My own breakfast was in the same vein, but totally cooked on the stove top, with a lid on the pan. Again, cooking is easy; Judging is not. Mine got some grated Parm as well.
