15 pounds of honey to start, about 5.5 gallons of water, lots of dried orange and lemon, a few cinnamon sticks, and about a teaspoon of whole cloves.
It's riding the Campden train for 24 hours or so, and then I'll throw the yeast. I haven't decided the strain of yeast I will use yet. Probably Red Star Premier Blanc, or maybe Lalvin 71b.
From what I'm reading it may be in the jug for nine months, and then bottle age for three more.
