In any case, todays batch (and last for a while) is 1/2 sour cherry, 1/2 apple, and 8 pounds of wildflower honey.
I expect I'll have to come back about halfway through fermentation and add more honey. I've never used it before in wine, so I'm going step by step til I get a handle on it.
As for yesterdays batch of cherry.... well....
For now, I'm just going to relax a while, and hope this headache fades.
