Citrus Magic ....

 

This pint jar actually has several days of work in it.

Citrus Magic seasoning blend.

Everything in the jar (except the tablespoon of kosher salt) has been through the dehydrator.  Then it's chopped in the processor.  Then it roasts in the oven at 250 for a couple of hours.  THEN it goes into the blender to be powdered.

Primarily limes, with a touch of lemon.  Sweet green and red peppers, and ancho peppers. Onions.  Garlic.  Cloves.  Fresh ground black pepper (A LOT). Kosher salt.

The idea originated with Tajin spice mix, a Mexican concoction involving peppers, lime zest, and salt.  Also in mind was lemon pepper seasoning universally used on fish and chicken.

This should be a touch of both, but clearly not either.

We will try it tonight on roast chicken tenders and maybe potatoes as well.  Perhaps Broccoli too.
