She says it is the best pulled pork I ever made. My reply, "I worked for hours on this!" Which is a lie on the scale of a political convention. She SAW me make this in minutes.
A 5 pound pork shoulder roast cut up in six big chunks. Size nor number don't matter. It's just so we can get them in the Instant-Pot pan to brown.... which comes next.
Add some olive oil to the Instant-Pot and set it to sauté. Brown the pork chunks about 5 minutes on a side. Not cooking it here, just getting color and flavor. Maillaid effect dontcha know.
I did my chunks in two batches so as not to crowd the pot. I used the waiting time to empty the dishwasher and reload it. Multitasking for the win!
As the last bunch of chunks is finishing, dump the rest back in. Add a sweet onion, peeled and quartered, and a quart of chicken stock. (I make our stocks to control salt and expense. Far better stuff than the store sells at any price). Set the timer for 20 minutes per pound, or 100 minutes in my case. Go have a life while it does the thing.
After the time is up and it cooled naturally, dump the contents through a strainer into a big pot. The pork and the onion remain in the strainer, and the pot gets the goodness.
Set up your Kitchen aid stand mixer with the paddle attachment. Dump the pork and the onion into the mixer bowl and let it go on the slowest setting for about 30 seconds. The pork is now 90% shredded and the onion is magically gone.
Add a bottle of your favorite sauce. Today I cheaped and used Baby Ray's. scrape the sides of the bowl down and turn it to low again for about 10 seconds. The meat is now perfectly shredded and sauced.
Dump it all back into the Instant-Pot and add enough of the reserved juice to make it... well.... JUICY. I used 3/4 of a quart. Put the lid back on and set the thing to slow cooker-low heat and there ya be. A big pot of pulled pork which tastes amazing and only has minutes of actual work invested.
Yes, I know... there are eleventy jazillion things that can be added at that stage (I'm looking at YOU Peach-Habanera jam). Do as you will. I'm just pointing the easy-peasy method. You don't have to admit it was easy. They will never know.
