12-6-24 Daily log

W: 318.2                BS: 201      A hearty WTF? to both numbers.   Maybe I need a radical change to kick up the mud a bit.

Cooked a massive turkey yesterday (along with a cabbage casserole that's a winner).

Today I make stock, and probably can some meat as well.   I think I can manage two batches of stock, and that will keep the canner cranked all day.  Good chilly day for that kind of silliness.

I expect this will be the kind of stock so rich it gels in the jar.

So... that casserole last night.
Start with a handful of loose sausage cooking in an oven-safe pan (2 inch straight sidewalls if you can).  While that's cooking, break it up and stir once in a while.  
While the sausage is cooking, slice cabbage and onion into bite sized pieces.
Toss a heavy knob of butter into the pan with the sausage, turn it to medium-high, and when the butter melts toss in the sliced veg.   Stir and turn every few minutes while it cooks down and softens.  Season.
While the cabbage cooks down, make a crumble topping with bread crumbs, melted butter, and shredded cheddar.  Use any seasoning you like, but use it for sure.
When the cabbage has wilted down to half height, dump on the crumble and spread it over the top.  Put the whole pan in a 350 oven for about 45 minutes.

Cool and eat.   The trick to making a superior cabbage casserole is to hide the cabbage flavor, I think.   



I'm curious. Does NASA ever do a mission on the timeline they tell us? When is the last time they did it, and what mission? When is the last time, if ever, they produced something on time and on budget?
Anything.... ever?
