Much cookery today as we are taking a meal to a friends home for her birthday.

Lawdog strips that Texas bill down and examines the reality.... which is not what people think it is.  At least, the people who listen to the liars and politicians.... but I  repeat myself.





We are shlepping dinner to a friends home today as it's her birthday.  Mom shouldna have to cook on her birthday!

I asked what would make her heart tingle, and she said "Something smoked.  Maybe something pulled".  As she has had my pulled pork several time, this was clearly a clue-by-four.

Here we have a six pound boneless pork shoulder roast that I grilled for three hours over smokey charcoal yesterday.  Chilled overnight, it's now in the oven, wrapped, at 350 till it hits 200 degrees internal. That should keep it in the magic 160-200 degree collagen melting zone for a few hours.  

I'll let it cool a bit then, pull it, and taste it before saucing.  If the smoke ain't there enough I know a few drops of liquid smoke in the sauce will bring that bang.

Along with will be baked potatoes, potato gratin, coleslaw, potato rolls, spicy pickles, brownies, and tiramisu. I hear fresh sourdough and roast carrots are coming from elsewhere.
