On my chore list today is to keep the pressure cooker busy with chicken, and the dehydrator earning it's price as well.
The Instant pot was filled with two family packs of drum sticks and two quarts of super-rich chicken stock. Set for 30 minutes, and then allowed to cool, it produced enough picked chicken for a week's worth of meal. Everything else went back into the pot with enough water to hit the 'full' mark. The machine was now set to 60 minutes.
When it cools enough to handle, I will strain it and fill jars with unbelievably rich stock. By tomorrow it will be chicken stock gel in the fridge. I'll probably make chicken noodle soup for Herself's lunch.
The dehydrator was put to work on kale and horseradish leaves. In only 30 minutes they looked like this:
That big heap of crunchy dry leaves crushed down to this:
Roughly 1/4 pint of dried powered kale/horseradish. Some day I hope to have a full pint of this, like dem rich folk has in dey kitchens.
What to use it for? Soups and stews, salad dressings, plate topping, anyplace that can use a green nutrient bump. Like this green goddess dressing:
A teaspoon of the powder in here with some fresh herbs, and Hory Row Batman, that is some good dressing. It also has less sodium than any store bought, but certainly doesn't taste like it.
