Seriously good eats: Breakfast food pron



This is not rocket science... it's just attention to detail. Never pass up a chance to add flavor, to enhance taste, and to build a presentation.

A diced baking potato, with some diced sweet onion, sauteed in butter till it just turns golden. Season with fresh ground pepper and sea salt. Set aside on plates while the eggs are cooked.

For the eggs, add more butter to the pan and use the spatula to scrape loose the delicious golden brown bits stuck to the pan from cooking the potatoes and onions. Crack open two fresh jumbo eggs right into the pan. Lid the pan, set on medium heat, for about two minutes. Clear glass lids are best, so you can watch the eggs as they set.

Once the whites are just set, and the yolk thickens, pull the lid and grind on some fresh black pepper. Sprinkle with a pinch of sea salt. That's long enough.... loosen the eggs with the spatula and slide them out of the pan right onto the home fries.

Gather a mug of your favorite morning brew, and get comfortable. Use your fork to break the yolks, letting them run down over the potatoes.

Eat.... savor.... relish.... enjoy.
