Wow- that is a trip down memory lane...I remember getting mofongo at a little place called Mr. Mofongo in Santurce- just of PR26.(Of course, yours looks 1000 times better than the fast-food version we were used to... What is that sauce?)Thanks for sharing that!TBG
The sauce is kind of a basic white sauce, but more complicated. It has a few seasonings added, sauteed diced orange pepper and mushrooms, asiago cheese, potatoes that have been seared brown. Add the shrimp, and it's a seafood stew.The tostones are easy, once the idea is down. I seasoned them as well.Makes for a FILLING meal. That bowl pretty much took care of me for the rest of the day.
