Pickled shrimpPork carnitas in the oven- ?
I was laying awake at 1am, breathing for life through an allergy blocked head, and thinking about pickled shrimp for lunch.
Three run-throughs on my hacked Navage brain flusher, and I could breath enough to finally drift off around 2ish.
Allergies are off the hook this year, and I need to trim up out front today ahead of a week of rain. Bandana time?
Pork carnitas for dinner this evening. Mostly traditional, except I had no oranges. About 4 hours cooking in it's own fat, plus a 1/2 pound of butter, plus many-many-lots of seasoning. Then, uncover, strain off, and put the meat back in under the broiler till crispy.
We will have it in tortillas with shredded red cabbage and cheddar cheese, with some sour cream. Pickles on the side.

When I get nasal congestion and can't sleep, this simple solution works for me: a fan blowing (lowest speed) directly into my face, from approx 18" to 24" away. It takes a minute or 2 for my sinuses to open up and I can breathe normally enough to sleep. This requires me to sleep on my side plus to have a fan properly positioned. I don't know if I am the only person this works for. YMMV.
We do a fan at night, but certainly not that close. Worth a try.
