Low cost salad fixings?

How about free?  Free suit you?

What we have here are 'Free' veggies, for a given value of free.  What I do is save the rooty end of anything I get that has one.  So far, that's Bibb lettuce, Romaine lettuce, green onions, and celery.

These throwaway plant bases will all sprout a new plant if given the chance.

How hard is it?  (Laughing...) Just stick it in the dirt.

Seriously, that's it. So far everything I shove into the soil of the raised bed has come roaring back with a fresh plant.  All it costs is the territory in the dirt.

One really nice feature of this is the spacing of the planting times.  They can't help but be planted exactly as fast as you use the produce.  We go through maybe three heads of lettuce a week, so I've begun shoving stray bits in various planting buckets to keep other plants company.

Cost is zero, and it doesn't get any easier.  What's not to like?  Anyone can do this!
