Clementine cake, AKA 'So Damn Easy Cake'.

So there I wuz, doing an on-line grocery order for pickup, and it was just there.  3 lb bags of Clementine oranges, $2.77 a bag if you buy 3.  That's a *Good Deal*.  Still, good deal or not, what the hell will I do with NINE POUNDS of Clementines?  Well, there is always jam if the kids are not snarfing them fast enough.  Then, a little voice said 'Clementine Cake', so I looked it up.  Huh!  It's a thing!


This is, hands down, the easiest cake I ever made.  I didn't measure a blessed thing.  Just dumped, blended, and baked.

Start the oven at 350.  The cake will be ready to go in long before the oven reaches temp.

In a blender, 3 Clementine oranges quartered and any seeds removed.  NOT peeled. Give the blender a quick pulse or two.  Next, about 1/4 cup of veggy oil, two eggs, a splash of vanilla, about 1/4 cup of sugar, 1/2 a teaspoon of baking soda, and 1 tablespoon of baking powder.  Pulse.. Pulse.. Pulse.

Now dump in a guestimated 1.5 to 2 cups of AP flour.   Blend on low till it becomes a batter.  If it's too thick (mine was) add water (or orange juice) a tablespoon at a time till it looks like a good thick batter.  If it's too thin, do the same trick with more flour.  Don't over blend.  Just 20-30 seconds should do.

I used a buttered silicone 9" square pan.  Bake time was 30 minutes at 350.  I applied a sprinkle of powdered sugar and some orange slices to finish it.

Oh, and it was delicious! 5 minutes prep, bake time, cool time, EAT.

I will do this again, but with spices for an orange spice cake.
