Oven at 375. Bacon laid out, double slice thick, on a rack. Grind on black pepper. Roast for 25 minutes. Pull it out.
Drizzle with honey, dust with cayenne, and brush it all in. Roast another 15 minutes.
Pull it again, and turn them over. Do the drizzle/dust/brush trick again. Back in the oven for another 15 minutes.
When going dark and crispy, remove from the oven and brush the puddled honey back over the bacon. Place on a plate on a piece of no-stick parchment. Let cool. This is why Carolyn would marry me all over again if I asked her to.
