Patience my pretties... patience.

Today......

22 pounds of sweet cherries we picked ourselves.

20 pounds of sugar.

6 gallons of spring water.

1/2 ounce of active yeast.


You tell me...... what is going on in my kitchen right now, and will be for the next few months?

Sounds like cherry wine ... I hope it turns out well.

Either it's a country wine, cherry wine, or you're making some sort of cherry cider. I would think for a wine you might need to add citric acid, but formulae vary. I will caution you, to remove the pits, as they, like apricots, and peach pits, contain cyanide. Which is acidic, too, but kind of bitter.
