Time for something lighter.... and food porn is always welcome. I don't have the joy of the weekly 'recipe run off' I used to relish*, but every once in a while I can still muster up an offering.
Today, it's steak braised in beer and onion gravy......
Begin with a fairly hot cast iron pan, and a steak or two (Your choice on cut, but this recipe is a great way to make tough Chuck into tender Charles). Slice the steak into bite sized pieces (this is easier if the steak is half frozen). Sear the chunks a few moments in a tablespoon of oil, and then turn the heat down to low. Toss in half a sweet onion, sliced into forkable bits.
Pour in half a bottle of your favorite beer, although this is a fine time to get rid of the cheap beer you bought when your in-laws came over, and you haven't had the desire to drink yourself. Once the beer comes to a simmer, watch it a moment as it tends to bubble up. Once it's calmer, drizzle in about a tablespoon of balsamic vinegar, a few grinds of fresh black pepper, and one crushed clove of garlic. Allow to simmer uncovered till the liquid reduces by half, and the onions go translucent.
Now, pour about a cup of cold beer into a two cup measure, and stir in a tablespoon of corn starch. When you do, you will immediately see why it's done in a cup larger than the liquid... it will foam up. As soon as it's well blended, pour in in the pan over the steak, onions, and sauce. Now, cover the pan and let it simmer on lower for about 30 minutes. Go do something.... something useful.
When it's ready, shut off the heat and let it rest for about ten minutes, and then serve with a nice fresh bread, maybe a course whole grain, spread with butter. The buttered bread is used to soak up the gravy... every last drop.
