I tried to be good during the trip, but it didn't turn out so. Gained 12 and sugar bumped. Easily explained by intermittent meds, eating out too much, and unrelenting stress and lack of sleep.
Home now, and begins the slog to get it all back under control and headed the right direction.
Today I'll do what chores must be done, but otherwise strive to relax and regain that good mindset. 40 degrees and rain/snow, so between chores that means sitting by the fire and baking bread maybe.

So.... I am baking bread today. Not an ordinary bread, nor an extraordinary bread. A 'special' bread. You see, next week I am making stuffing/dressing* which calls for dried bread cubes.
What stray bread we have usually goes straight to the chickens, so there's none of that. I COULD just buy a loaf of bread and set it out to go stale, but that's so boring!
No, I am baking bread specifically to make dressing/stuffing with. It is quite enriched with eggs, cream, and yogurt. The dough is heavy on dried garlic and onion, black pepper, parsley, and sage. Very heavy on those seasonings.
To bake, I'll spread it out on an oiled sheet pan and bake till it has a good brown crust. Then it can rest in the oven as it cools down. This will amplify the yummy crusty outside while drying the inside.
Once cool and dried, I'll cube it and store in Ziplock's till its dressing/stuffing season. YUM!
The stuffing/dressing itself will be made with chicken stock, fresh eggs, sauteed onions, Parmesan cheese, fresh sage, Aleppo pepper, and fresh chives. Oh, and the bread, of course.
*I am told the correct name depends on which side of the pond you are speaking from. As there is some controversy over this, I am being inclusive and including the incorrect name for this dish to make a very few people (ONE person) happy-ish.
