Thinking deep thoughts lately. I shouldn't do that. Gives me the ague and flusters something fierce.
Sodium math... in which my head hurts. Being on the CHF bandwagon means I must monitor and control sodium like a vampire keeps track of daylight savings time.
Today I am making bone broth for a ramen dinner tonight. I expect to make a full eight cups of broth in the Instant pot over the course of the day.
Now, if I use just one measured tablespoon of Kosher salt in that 8+ cup batch, it will work out to about 1000mg per serving. Yes, 1/8th of a tablespoon of Kosher salt is roughly 1000 mg of sodium, and my entire daily ration.
On the other hand, I can probably do just one teaspoon since the fam is now highly sensitized to salt.
Itty Bitty kitchen tip.....
This morning I had the fun of breaking down a whole beef loin. This is quite literally a 'Bloody Mess'. Not wishing to spend extra time cleaning up, I did what you see above. It turns out a medium cutting pad is a near perfect fit in a half-sheet baking tray. The pad protects the blade, and the tray captures the mess. We also do this when carving whole chickens, turkeys, and roasts.
